    Yum — the colour combo is gorgeous and the drizzle of oil with squeeze of lemon on the top of the peak of veggies makes me want some now. Love the pea shoots too. Gotta get me some.

    Sounds delish and I LOVE the combination of flavours. You may find it easier to peel the beets AFTER boiling tho. your hands may be tinted but the peel slips off quite easily, as does peaches after a hot water plunge.
