For those of you who have had the privilege of working in the industry, this photo in some ways captures one of the most sought after moments during service, the smoke break. 1st from left, you have a cook taking advantage of his time away from the heat of the kitchen by lighting one up. In the middle you have an audacious couple, most likely from the front of house, locking lips. Lastly, another server stares off into the distance trying to clear his thoughts before heading back to the chaos.

Rob Fiocca is one of Toronto’s elite food photographers. His attention to detail and nack for making food look natural and not over styled make him a unique player in the food photography game. This photo was taken in his studio during a creative session with his prop & food stylists. This photo displays his unrivaled sense of focus and concentration, similar to that of a sniper. The only difference is, his weapon of choice is a camera.

In the restaurant business, you show up to work and almost expect to experience a form of controlled chaos. Otherwise known as “In The Weeds” or “In the Shits”. But the funny thing is, you don’t complain, whine nor give up.  You just get the job done. This photo, taken at  a restaurant kitchen in Toronto, gives us a glimpse into that controlled chaos. Sure, all you see is just a regular kitchen during a busy service. What you don’t know is that they may be on a wait list of 15+ people, during brunch for that matter, with 2-3 guys working the line, and for a moment ,they just might be slipping into the weeds. But they don’t give up. They just get the job done.

Brandon Olsen is a cook that has been working in some of Toronto’s best kitchens for years.  When it comes to food, he is a very focused individual that just wants to learn as much as he can.  Brandon’s passion for cooking is evident through the countless hours he spends in the kitchen.  This photo was taken while he was taking a break from a busy day of cooking.  Despite the tired look in his eyes, his playful nature comes through and shows us his lighter side.
