<p style="text-align: center;">For those of you who have had the privilege of working in the industry, this photo in some ways captures one of the most sought after moments during service, the <em>smoke break</em>. 1st from left, you have a cook taking advantage of his time away from the heat of the kitchen by lighting one up. In the middle you have an audacious couple, most likely from the front of house, locking lips. Lastly, another server stares off into the distance trying to clear his thoughts before heading back to the chaos.</p>

<p>The feeling is all too familiar.</p>
<p style="text-align: justify;"><span id="more-1133"></span><strong> </strong><span style="color: #888888;">FOODTOGRAPHY is a column that features food photos and portraits that capture everything relating to the food world whether it be emotions or just great food shots.</span></p>
<p style="text-align: justify;">In the restaurant business, you show up to work and almost expect to experience a form of <em>controlled chaos</em>. Otherwise known as &#8220;In The Weeds&#8221; or &#8220;In the Shits&#8221;. But the funny thing is, you don&#8217;t complain, whine nor give up.  You just get the job done. This photo, taken at  a restaurant kitchen in Toronto, gives us a glimpse into that <em>controlled chaos</em>. Sure, all you see is just a regular kitchen during a busy service. What you don&#8217;t know is that they may be on a wait list of 15+ people, during brunch for that matter, with 2-3 guys working the line, and for a moment ,they just might be slipping into the weeds. But they don&#8217;t give up. They just get the job done.</p>
