
It’s a little too early in the season to be tired of canning just yet. But maybe you’d still like an alternative to jars of jam.
Canning can be truly rewarding, especially in the dead of winter when the burst of summer from a jar is a welcome reprieve from the gray and cold. But during the summer months I sometimes yearn for a simpler way to preserve fruit, especially when it’s hard to eat through the abundance of strawberries, peaches etc before they start to rot. These fruit leathers are an excellent way to easily preserve and it requires little more time than simply tossing the fruit in the freezer. The best part is you can jazz them up the way you would other preserves with herbs and citrus and you can pretty them up with wax paper and string as well. Make a bunch, roll them up and then toss them into the canning jar you would’ve used for jam and you’ve still got a pretty awesome seasonal present.
