
We have nothing but awe and admiration for Deb of Smitten Kitchen and the delicious meals she makes, like this Mediterranean baked feta and tomato dish.
This Mediterranean tomato and feta bruschetta is not only a perfect way to end the summer but it couldn’t be easier to throw together for one final hurrah with friends: Just pile a bunch of cherry tomatoes, Kalmata olives, red onion, garlic, parsley and olive oil on top of a block of feta cheese and then bake it in the oven or grill it over the backyard barbecue. Once the feta has softened, the rest should also be soft enough to eat with crackers or pita.
Looks like we know what we’ll be making this weekend.
