Raw Color’s Deconstructed Dishes

When a dish is crafted artfully it should be more than just the sum of its parts. But we love Raw Color’s artful take on the parts of chef Pierre Gagnaire’s most recent dishes.

When the London restaurant, Sketch, where Gagnaire is chef, went through a recent overhaul, Raw Color put together a series of photos that deconstruct Gagnaire’s menu in a tasteful, colourful way. Each of the photos represents a dish on the menu with each of that dish’s ingredients stacked on top of each other.

The Navet Martin Creed features a black olive, a hunk of beetroot, goat cheese, parmesan cheese, a piece of lobster tail and a coconut – all in a puddle of squid ink.
