About three years ago, Roy Choi invaded Los Angeles, California with a fleet of food trucks that fused Korean and Mexican flavours in a way that no street food eater had ever tasted before. It was his creative cooking, like kimchi quesadillas, pork belly bowls and short rib tacos, and serious use of social media, like Twitter, that lifted Choi and his truck, Kogi, to street food fame. He has even won such praise as “the iconoclast who sparked LA’s mobile street food revolution”.
