Anderson has been growing broad beans for years as a way to bring nitrogen back to the soil in his garden but it was only recently that he began eating them. If you’ve never had broad beans yourself, this salad of broad beans, tarragon, lemon and cheese is the perfect way to get to know the large lentils.
Anderson says that if you don’t have tarragon, you can also use chervil, dill or some other herb to bring that aniseed flavour to the salad. You can also play around with cheeses like pecorino, parmigianino or grano pardano. Throw in a few handfuls of fresh salad greens and you’ve got a hearty but healthy lunch.
